Coffee isn't simply a commodity; it's an agricultural practice passed down through generations. This philosophy is evident in our newest single-origin offering: Finca El Cerro, translating to "Hill Farm."
In 1972, Francisco Quinonez inherited El Cerro, inspiring a new chapter for his family's coffee legacy. His son, Alejandro, brings his agronomy studies to bear on the farm's innovative approach to planting and maintaining diverse coffee varietals. Their dedication is a key ingredient in El Cerro's success.
This coffee is part of a collaborative project with San Miguel, who empower small farmers through investments in advanced micromills for final processing. This specific lot underwent a meticulous 36-hour fermentation, followed by a washing stage and drying on raised African beds. This meticulous attention to detail unlocks a captivating depth of flavor in the final cup.
El Cerro's offering is a 100% Washed Red Bourbon. The finished cup presents a mellow sweetness reminiscent of cocoa, culminating in a lingering black tea note. The balanced acidity echoes the brightness of blood orange. While this coffee shines in any brewing method, we find it particularly captivating as a pour-over.
