Made with a single origin Ethiopian coffee called Laayyoo, Monster Mash is a natural process coffee produced at the Raro Nensebo Drying Station in Uraga, Guji. Laayyoo is made up of cherries from 35 different farmers in the local “kabele,” with their farms sitting between 2,100 and 2,350 meters above sea level. They’ve been able to identify their heirloom varieties as 74110 and 74112.
The processing at Saakoo Coffee is immaculate. They have strict roles about the depth of the drying cherries (3cm) and moving cherries around six times per day, which prevents development of overfermentation. Coffee is dried for no less than 21 days, up to 28 days.
