CHEMEX

Developed in the 1940s, Chemex has been a staple in homebrewing. We use this brew method to bring out a more pronounced sweetness in the cup while still emphasizing a more well-rounded body.

To brew using a Chemex:

  1. Pour 30-50g water slowly onto the grounds, then start the timer.
  2. At 0:30, begin pouring mildly heavily to 300g, which should occur at 1:00, then stop pouring.
  3. From 1:00 to 1:30, let the slurry drawdown.
  4. At 1:30, begin pouring to 400g, which should occur at 1:45, then stop pouring.

The slurry should draw down and stop dripping between 3:15 and 3:45
